The Tuna Wrap

Liz was feeling a tad bit uncomfortable last night while we watched a movie. Perhaps it was due to the quality of the cinematic fare, but more likely because of an active critter inside her belly. We watched "The Grudge," which I thought was good and creepy, but Liz gave it the big thumbs down. At one point, I think I heard her say, "I'd rather be watching Celebrity Makeovers or Supernanny." The unborn baby was working on it's elbowing and roughing skills. Regardless of the gender, a hockey player no doubt.

Fans of the sight are starting to weigh in on discussion points. Yes, I am upset that the NHL season is cancelled, but it's quite a mess, and I don't see an end in sight. Let's start pulling for the overachievers (Gopher Men's hoops) and ignore the underperformers (T-Wolves). What's not to like.

I have to apologize to everyone for sending mixed signals on wanting to stay pregnant or having the baby. Honestly, the mood changed overnight. Now that Liz is pretty much term (37 weeks) we're both ready to go, whenever. So, there you have it. It's me. I'm the one who's schitzophrenic. Bad blogging. Bad. And now (drum roll please), for your dining pleasure.

Dave's Hot Tuna Wrap

One can of water packed tuna, drained
2 T mayonaise
1 T dijon mustard
1/8-1/4 cup chopped onion (or less depending on onion tolerance)
5-6 slices if cucumber (thin, but not like paper thin, ok?)
Romaine Lettuce
a few chopped jalepenos (use the jarred ones)
salt and pepper to taste.
1 burrito size whole wheat wrap (go low carb if you want)
2 slices pepper jack cheese (or cheese of choice)

Combine tuna, mayo, dijon, jalepenos salt and pepper. Cover, set aside in a bowl in the fridge.
Place 2 large lettuce leaves and 5-6 slices of cucumber in the middle wrap. Gently deposit tuna mixture on top of lettuce and cucumbers. Top with cheese. Fold in sides of the wrap over mixture, and fold up from the bottom, rolling it into a wrap.

Serve with chips (optional), pickle (optional) and a can of beer (mandatory).
